Im thinking of getting an Ultra X-Connect 500w PSU but Im worried about not having enough wires and such, or of course, buying the wrong thing entirely... This is my system...

I would not skimp on the PSU. A nice Antec with a rating of (I'll disagree with Morgan) at least 350, more like 400 should do you nice. PSU's you can usually move from system to system if you buy smart. Plus, well, it's one of the most critical components....
The Antec I purchased for my Desktop has been plugging along great for the last year and a half or so. That system was, for a year, almost never off. Lately it's been off unless used to run Sonar.
Well, Ive got a generic in there now and Ill tell you what...
The temperature gauge on the fron fades and dies from time to time and the computer generally becomes laggy and sometimes freezes when I use image intensive programs... my assumption as well as a few others... Power issuies...
Provided you're not running an SLI/Crossfire rig and a high-draw P4 (dual core 3.2ghz+), a ~300 watt antec or 330watt enermax will be fine. You can always get something with more juice if you feel like spending the money, but what I'm suggesting will be more than adaquate for all but the silliest dual core/SLI disk heavy rigs.
