Accurate Sabaac rules?

I don't think there's a way to come up with "accurate" sabacc rules at this point. The problem is it's a fictional game that's been elaborated on by a bunch of different authors who never had the idea in mind to explain exactly how it works. Certain authors have made efforts to define values for the different cards and that in itself is a big help. However like real life card games there are tons of different types of sabacc. It would be like in real life if you had 20 different people talking about "Poker", well there are many different variations of Poker.. Texas Hold 'em, 5 Card Stud, Omaha, and the list goes on and on. So if you heard all of these people talking simply about "Poker" you wouldn't really get a good idea of how to play the game because they could all be talking about different variations of the game.
According to the CUSWE there are about 5 standard versions of the game, along with standard decks and non-standard decks. It seems that the most consistent rules of the game are pretty basic.. you have to get to 23 or -23 without going over or under respectively. Sound kind of like a more in depth version of Pazaak. But I'd say if you're trying to RP out a sabacc game just use your imagination.. and the fact that the author of that information didn't even spell sabacc correctly doesn't really bode well for its accuracy.

I tried to RP out a sabacc game once. All I had to go on was a short paragraph in the SW Encyclopedia. It made Chau's head hurt...

I Rped teaching someone to play sabacc once. It's hard to RP, especially when those you RP with aren't into the sabacc part of the RP.
The best I've heard it described is as a kind of blackjack where the cards have negative and positive values, and their value changes when paired with different cards. You can get either a positive or negative sabacc, and the dealer gets to electronically randomize your cards unless you put them into the interference field that makes their value constant (unless the other cards in your hand change, which could change the static card's value).
